A bunch of NUTS went into a BAR

Prep time: 
15 minutes

Prep notes: 
grind nuts to your preferred consistency--some like fine, some chunky

Cooking time: 
0 minutes

Yields: 
6 people

Ingredients: 
1 egg, beaten
1 1/c cups finely ground nuts (I use mostly almonds and/or walnuts
cinnamon to taste (1/2 tsp works for me)
3-6 tbs honey or agave; alternately, 1/4 c sugar or coconut sugar
vanilla or almond extract (if desired)
1/4 cup chocolate chips (I use dark), cranberries or a mixture of both (YUM!)



Directions: 
Beat the egg, then add the nuts.  

Mix well before adding other ingredients (mixture should hold together without      being too sticky); add nuts if you need it less gooey, honey or egg if you need it to  hold together more.

Turn into greased pyrex pan (square for thicker bars; 6x12 rectangle for thinner).

Bake in preheated 325 degree oven for 15-20 minutes.  Cool before cutting.



Notes: 
As with all of my recipes, PLAY AROUND!  Sometimes I sprinkle shaved coconut on top.  You can add raisins instead of chocolate, use different nuts...make it with bananas and apples as a breakfast bar--Use your imaginations!

These bar cookies are part of the intuitive cooking class recipes--batter can be scooped as heaping tablespoonfuls and baked on parchment paper (I would then change the cooking time to 12-15 mins)--Play around until you are comfortable--you won't go wrong--just don't overcook them.
